- Boil the pasta in water.
- Pour all of the olive oil in the pan.
- Fry The Eggs Sunny Side Up Style. It's Very Important The The Yolk Is Mostly Liquid, But Hot. Tip: Cook on low heat to better control the consistency of the eggs and avoid losing olive oil via splashing.
- When the pasta is done, put it in a plate and move the eggs from the pan and onto the pasta with a fork. DO NOT pour the oil along with the eggs. You will need it for the next step.
- Drop the Myzithra shredded cheese in the hot olive oil in the pan and cook it for 20-40 seconds on low heat. When it turns golden brown and fragrant, quickly pour around the eggs and onto the pasta, along with the remaining olive oil.
- Enjoy. (Use the egg yolks as your pasta sauce. Don't judge until you try it! It's tradition for a reason)
