  1. Boil the pasta in water.
  2. Pour all of the olive oil in the pan.
  3. Fry The Eggs Sunny Side Up Style. It's Very Important The The Yolk Is Mostly Liquid, But Hot. Tip: Cook on low heat to better control the consistency of the eggs and avoid losing olive oil via splashing.
  4. When the pasta is done, put it in a plate and move the eggs from the pan and onto the pasta with a fork. DO NOT pour the oil along with the eggs. You will need it for the next step.
  5. Drop the Myzithra shredded cheese in the hot olive oil in the pan and cook it for 20-40 seconds on low heat. When it turns golden brown and fragrant, quickly pour around the eggs and onto the pasta, along with the remaining olive oil.
  6. Enjoy. (Use the egg yolks as your pasta sauce. Don't judge until you try it! It's tradition for a reason)
