  1. In a large pan, heat the olive oil, and cook the onions and garlic until the onion is almost translucent. Add the paprika, cumin and oregano, and cook for a few minutes, taking care not to burn the spices.
  2. Add the beans, vegetable stock, and chopped tomatoes to the pan. Heat until the mixture begins to bubble
  3. Reduce heat to simmer, and cook until it begins to thicken - around 15-25 minutes.
  4. While that is cooking, cook the vegan sausages as per packet instructions (optional source of protein)
  5. To serve, spoon the chili into a bowl, stir in some lime juice and chopped cilantro, and top with a bit of yogurt and a couple of vegan sausages.
  6. Tip🍴: Add mushrooms, diced sweet potatoes, or diced eggplant for a more complete meal. Also use kidney beans or turtle beans instead of black beans.
