- 1-remove the foot of mushrooms. Wash caps and dry. Cut in thin slices. 2-In a wok on med-high heat, add both oils. when they start smoking add garlic and chilis, fry for 20 seconds. 3-add mushrooms, fry for about 3mn. 4-add Shaoxing wine, salt pepper to taste, and sugar. 5-add chicken and fry for about 4mn until fully cooked. 6-just before serving add sliced green onions, mix well 1 or 2 times the whole content in the wok. 7-serve immediately.
