Ingredients

  • Seaweed

    Wakame, raw

    ¼ cup or 20g

  • Scallions

    Spring onions or scallions (includes tops and bulb), raw

    2 tbsp chopped or 12g

  • Miso

    ½ tbsp or 9g

  • Olive oil

    Salad or cooking

    2 ½ tbsp or 34g

  • Water

    Plain, clean water

    1 ½ cup or 355g

Directions

  1. Thinly slice scallions.
  2. Prepare wakame: Combine wakame with warm water to cover by 1 inch and let stand 15 minutes, or until reconstituted. Drain in a sieve.
  3. Make soup: Stir together miso and warm water in a bowl until smooth. Heat 1/2 cup water over moderately high heat until hot, then gently stir in tofu and reconstituted wakame. Simmer 1 minute and remove from heat. Immediately stir in miso mixture and scallion greens and serve.
