  1. Heat the oven to 400°F and line a rimmed baking sheet with parchment paper.
  2. In a small bowl, whisk the miso, mirin, and sesame oil until completely smooth and glossy.
  3. Pat the salmon dry and place it skin-side down on the prepared sheet. Season lightly with salt and pepper.
  4. Brush the glaze evenly over the top and sides of the salmon to coat.
  5. Bake until the salmon is just opaque in the center and flakes easily with a fork, 12–15 minutes depending on thickness.
  6. Remove from the oven and let rest for 2 minutes before serving.
