Directions

  1. For the Berries: In a large bowl, mix the frozen berries a3/4 cups of sugar, 1/4 cup of flour. Place the berry mixture in the microwave and defrost for approximately 8 minutes, stirring midway through. (Optionally, you may place the berries in the bowl along with the sugar and flour 2 hours prior to making the cobbler. Stir the berry mixture every 30 minutes or so to ensure even thawing.)
  2. Preheat oven to 350 degrees F.
  3. For the Cobbler: 1. In a small bowl mix 1 cup of milk and 1 1/2 tbsp of vinegar together and set aside. 2. In a large bowl combine the remaining flour, sugar, salt, and baking powder. Cut the butter into the dry ingredient mixture until it forms pea-sized bits of coated butter throughout. (Cutting the butter can be done using a pastry cutter, or by hand. Simply kneed the butter into the mixture until it obtains the desired consistency.) 3. Fold the milk mixture into the flour mixture to create a crumbly dough.
  4. Assembly: 1. Transfer the Berry Mixture into a 9x13 baking dish and spread evenly across the bottom. 2. Using a handful of cobbler dough each time, form the dough into disks approximately 1/2" thick and 5 inches round. Place each disk over the berry mixture in the 9x13 baking pan. (Do not push down into the mixture it needs to sit on top). (The disks will not cover all of the berry mixture, There will be slight gaps between each of them.) 3. Using the remaining 1/8 cup of milk, brush the tops of the cobbler disks.
  5. Bake the completed cobbler for 45 -55 minutes or until a toothpick inserted into the cobbler comes out clean. The top should be golden brown and all of the exposed berries will be bubbling.
  6. Allow the cobbler to cool slightly then serve. (Ice Cream or Whipped Topping go perfectly with this dish.)
  7. Leftovers can be stored for up to 3 days in the refrigerator.
