  1. Combine olive oil, lemon juice, garlic, oregano, salt and pepper
  2. Brush the mushrooms with the dressing and cook in a pan for 5 mins, turning occassionally until mushrooms are tender. Remove from pan and add to a large bowl
  3. Add haloumi to the pan and cook until golden. Add to the bowl with the mushrooms along with the spinach and tomatoes.
