- Prepare Quinoa by adding 2cups water to each cup grain. Bring water to boil then let cook for 15 mins on medium low heat.
- Prepare thinly sliced garlic. Add olive oil to saucepan and sautee garlic and mushrooms on medium high heat for 5 mins. Add onions and salt.
- Add fresh spinach to pan. Reduce heat to low and let cook for 1 min with lid.
- Add quinoa and let look 1 min.
- Chop apples and serve over or mixed into dish.
