  1. Preheat oven to 425F. Diced sweet potatoes in to chunks and toss with oil and salt and pepper. Roast for 15-20 minutes until tender on the inside and crispy on the outside
  2. Meanwhile, whisk the tahini, water, lemon juice, minced garlic in a bowl until it is a dressing consistency. Salt to taste.
  3. Cook quinoa to package directions.
  4. To serve or meal prep - place a handful of mixed greens at the bottom. Top with 1/4 of the quinoa, sweet potato, and chickpeas. Drizzle with tahini dressing and 1/2 sliced avocado. Top with fresh cilantro. Enjoy!
