Directions

  1. Preheat oven to 180C
  2. Peel carrots. Place raw Lamb (Shanks) on top of carrots in a large casserole dish (Dutch Oven)
  3. Pour the canned (plum) tomatoes and crush. Add peeled garlic cloves whole. Pour enough wine (red for richness, white for sweetness) to cover 1/3 - 1/2 the pot
  4. Cover and cook for 2 hours. Serve with veg
