Directions
- Preheat oven to 500 F. Line baking sheet with parchment paper.
- Mix water and sugar. Sprinkle yeast on top. Let sit about 10 minutes until foamy.
- Add milk, garlic, flour, oil, and salt to the yeast mixture and stir. Add 1 tbsp of flour at a time as needed to make dough come together.
- Add cold butter pieces and knead the dough very briefly (1-2 minutes). The dough should be a little wet. Add a little bit of flour at a time if dough is too wet. Don't worry if butter isn't fully mixed into dough--chunks are good
- Coat a bowl with 1 tsp oil, add dough, then coat in oil. Cover with plastic wrap, then clean kitchen towel. Leave to rise until doubled (1-2 hours).
- Punch down the dough and transfer to floured surface.
- Roll the dough to a rough 1/4 thick circle.
- Cut out dough pieces with 3.5 inch cookie cutter (or bowl). Stretch each piece with hand slightly, then place on baking sheet one inch apart. Repeat rolling and cutting until all dough is used. Prick naans with fork to make tiny holes.
- Bake in preheated oven for 8-9 minutes. (Check on dough after 8 minutes). When it looks done, switch the broiler on for 1 minute. Remove from oven, brush with butter, and let cool.
- Sprinkle some chopped cilantro on top and serve.
