- Preheat oven to 400 degrees. Line a baking sheet with foil, and coat with Olive Oil spray. Remove stem and leaves from broccoli; wash and pat dry. Cut head in half, and then cut florets into bite-sized chunks. Arrange the florets in a single layer on the foil-lined baking sheet Melt butter and drizzle over the broccoli, and toss gently to coat on all sides. Then sprinkle the broccoli with the parsley, cheese, and salt and pepper, to taste. Bake for ~25-30 minutes, and then carefully flip them over using a spatula. Cook an additional 25-30 minutes, or until lightly and evenly browned, and tender. *If vegetables start to dry out or get too brown during the baking period, spritz lightly with olive oil spray and cover them with foil.
