- In a large bowl, toss the chicken thighs in the seasonings until well coated. **Use plenty of salt.
- Place the chicken thighs in a roasting pan, skin side up. Roast until skin is browned and meat thermometer inserted reads 160 C (about 30 min). Sprinkle the chicken with a bit of dried oregano after you take it off the heat. Enjoy with more lemon juice and a dash of hot sauce or tomato salsa.
