  1. Heat broth. Chop onion. Heat oil in a sauce pan over medium heat. Sauté the chopped onion in a large saucepan over a medium heat until golden brown (about 5 minutes)
  2. Add the frozen peas and the broth to the saucepan and simmer for 10 minutes.
  3. Transfer the mixture to a food processor, adding the fresh mint, salt, and pepper. Blend until smooth.
  4. If eating right away, return the soup to the saucepan and re-heat.
