  1. Use a mandolin or great knife skills to slice up zucchini into spaghetti thin noodles, set aside. Roughly chop basil, onion and garlic then place into blender. Add olive oil and blend until smooth. In a pan, sauté mushrooms and set aside. In the same pan, add two tablespoons of water and zucchini, simmer until water starts to evaporate. Add mushrooms and pesto sauce into the pan and stir gently, mixing everything together.
