Ingredients

  • Potato

    Flesh and skin, raw

    600g

  • Olive oil

    Salad or cooking

    1 tbsp or 14g

  • Chicken breast

    Broilers or fryers, meat and skin, raw

    2 ⁵⁄₁₆ full small breast (both fillets) or 400g

  • Onions

    Sweet, raw

    2 onion or 662g

Directions

  1. Preheat the oven to fan 160C.
  2. Chop potatoes.
  3. Fill a pot with water, add potatoes with a pinch of salt, and parboil for 10 minutes.
  4. Peel and chop onions.
  5. Rub chicken with most of the piri-piri seasoning and lay in the roasting tray.
  6. Add onions and potatoes and season with salt, garlic, and remaining piri-piri seasoning. Top with oil.
  7. Place in oven to roast for 35-40 minutes.
