Ingredients

Directions

  1. Warm up the corn tortillas in the microwave for 1 minute.
  2. Make sure they are pliable and not stiff.
  3. Add 2 tablespoons of potatoes to end of the tortilla and top with 1 tablespoon cheese.
  4. Roll up the tortilla.
  5. Insert a toothpick to the center of the taquito. Set aside.
  6. Repeat until there are no more tortillas.
  7. Heat oil in a large skillet.
  8. Add 1-2 taquitos to the oil.
  9. Do not overcrowd the pan or they will not brown properly.
  10. Brown on all sides. About 2-3 minutes on each side.
  11. Then lay on a paper towel to drain any excess oil.
  12. Repeat until all are cooked.
  13. Add desired toppings.
  14. Enjoy!
