  1. Grind the oatmeal into oat flour using a food processor.
  2. In a bowl, mix the oat flour, egg whites, whey protein powder, flaxseed, and milk until well combined.
  3. Warm the blueberries in a small saucepan over low heat.
  4. Heat a non-stick skillet over medium heat and coat with non-stick coconut oil spray. Cook several silver dollar pancakes at once, a few minutes per side until evenly golden brown. Transfer cooked pancakes to a plate.
