  1. Rinse quinoa well in a strainer and drain. 1 cup quinoa and salt to 2 1/2 cups water in a pot. Bring to a boil, uncovered. When it starts to boil, cover and simmer 20 minutes or until the water is absorbed and quinoa is light and fluffy.
  2. Spray skillet with non-stick cooking spray. Heat over medium heat. Cook ground turkey about 7-10 minutes until cooked all the way through.
  3. Spray skillet with cooking spray over medium heat. Saute pepper and onions for about 5 minutes.
  4. Combine all ingredients together. Top with salsa and shredded cheese. Enjoy!
