- Slice the shiitake mushrooms. Press the garlic clove without any juice running out. Finely chop the thyme.
- Bring 2 cups of salted water to a boil in a medium saucepan. Add quinoa, reduce heat to medium-low, cover, and simmer until tender and water is absorbed, about 13 minutes.
- Meanwhile, heat oil in a large skillet over medium-high heat. Add onion and sauté until it begins to brown, about 5 minutes. Add garlic and stir for 30 seconds. Add mushrooms and thyme, and sauté until mushrooms are tender, about 6 minutes. Add wine and stir until the wine is reduced and the liquid is syrupy, about 2 minutes.
