  1. Preheat the oven to 500 °F. Cover the roast with the garlic powder, paprika and pepper.
  2. Cook in the oven for 5 minutes per pound, then turn off the oven and leave the roast there (keeping the door shut) for an hour.
  3. Remove the roast, and tent with foil.
  4. Let it rest again for an additional 10 to 15 minutes to allow juices to distribute evenly. Store in the fridge, and slice as needed throughout the week.
  5. Note: You can make a delicious gravy by adding beef broth to the pan drippings. Sprinkle in a little gelatin to thicken, then season with salt and pepper to taste. Scrape the drippings from the bottom of the pan with the back of a wooden spoon and simmer for 4 to 5 minutes, adjust the seasoning, and pour over slices of roast beef.
