- Heat oven to 400°F. Cook orzo per package directions.
- In shallow 2-quart baking dish, toss tomatoes, garlic, and capers with 1 tablespoon oil and 1/4 teaspoon each salt and pepper. Roast 6 minutes.
- In bowl, toss shrimp with remaining tablespoon oil, then oregano and 1/4 teaspoon each salt and pepper. Nestle among tomatoes and roast until opaque throughout, 5 to 7 minutes more. Toss with parsley.
- Serve over orzo and top with pickled red onions, olives and yogurt; serve with lemon wedges if desired.
