  1. In the bowl of a stand mixer, dissolve 230g of mature starter into water along with the dry yeast.
  2. Add the flour, sugar, and salt, then knead until the dough is nice, about 8-10 minutes.
  3. Allow the dough to rise in the mixer bowl, nonstick spray if needed with a plate over top, until doubled in size. (About 60-90min.)
  4. Preheat oven to 425F.
  5. Form two loaves from the dough and put them in loaf pans. Cover and rise for another 60min or so, until fluffed.
  6. Split the tops of the loaves with a lame. Bake for 25-30min.
