  1. Remove salmon's skin and bones. remove grey parts of the meat. Cut the fish to bite size chunks and place cut nicely on plate or tray.
  2. Shred carrot and cucumber to noodle shape length of shreds. Mix with hands and place over the fish.
  3. Whisk the soy sauce with the rice vinegar and sesame oil. Distribute the mixture evenly over the fish and vegetables, using spoon.
  4. Allow the fish to soak in the mixture for 15 minutes.
