Directions
- In a large skillet, brown the sausage over medium heat, breaking it into small pieces, until fully cooked, about 8 minutes.
- Whisk together the eggs and milk until well blended. Add to the skillet with the sausage and cook until the eggs are set, about 5-7 minutes.
- Stir in the salsa and cheese, and cook for an additional 5-7 minutes until the cheese is melted and the eggs are completely cooked.
- Allow the mixture to cool slightly.
- Place ⅓ cup of the mixture in the center of each tortilla and roll up.
- To freeze, wrap each burrito in plastic wrap and place in a freezer bag.
- For reheating, remove burritos from the freezer and plastic wrap. Microwave for 2½ minutes, placing a mug of water in the microwave to prevent edges from hardening.
