Directions
- Warm the olive oil in a small Dutch oven over medium heat. Add the chopped onion and minced garlic and cook, stirring, until golden, about 10–12 minutes.
- Stir in the chorizo, paprika, and half of the salt, cooking until the oil turns reddish and the chorizo is fragrant, about 2 minutes. Add the chopped tomatoes, bay leaves, thyme, and oregano, and cook 1 minute more.
- Add the chopped potato, water, and remaining salt. Bring to a boil, then reduce to a gentle simmer, cover, and cook until the potato is almost tender, about 15 minutes.
- Stir in the chopped kale and continue simmering until both potato and kale are tender, about 10 minutes.
