Ingredients

Directions

  1. Warm the olive oil in a small Dutch oven over medium heat. Add the chopped onion and minced garlic and cook, stirring, until golden, about 10–12 minutes.
  2. Stir in the chorizo, paprika, and half of the salt, cooking until the oil turns reddish and the chorizo is fragrant, about 2 minutes. Add the chopped tomatoes, bay leaves, thyme, and oregano, and cook 1 minute more.
  3. Add the chopped potato, water, and remaining salt. Bring to a boil, then reduce to a gentle simmer, cover, and cook until the potato is almost tender, about 15 minutes.
  4. Stir in the chopped kale and continue simmering until both potato and kale are tender, about 10 minutes.
  5. Stir in the shrimp and simmer just until they curl and turn pink, about 3 minutes. Remove and discard the bay leaves.
  6. Taste and adjust seasoning, then ladle into bowls and serve hot.
