Simple Potato Soup

Ingredients

• Potato

  Flesh and skin, raw

  1 potato, large or 369g

• Vegetable Broth

  From bouillons. Low sodium

  4 cup or 960g

• Garlic

  Raw

  4 cloves, minced or 12g

• Cabbage

  Raw

  4 cup, chopped or 356g

• Salt

  Table

  1 dash or 0.4g

• Pepper

  Spices, black

  1 dash or 0.1g

• Chives

  Raw

  2 tbsp chopped or 6g

Directions

1. Bring the vegetable broth to a boil in a pot.
2. While the broth is heating, chop the potato into bite-sized pieces.
3. Add the chopped potatoes to the boiling broth.
4. Chop the cabbage and mince the garlic.
5. Add the cabbage and garlic to the pot. Season with salt and pepper to taste.
6. Reduce the heat and simmer until the cabbage is soft, about 30 minutes.
7. Serve the soup garnished with chives.
