- Preheat oven to 375 F.
- Cut Pork off the bone into slabs and sprinkle liberally with salt on all sides.
- Add 1/3 cup of water and cover tightly to bake for one hour.
- Raise the oven temperature to 450 F. Uncover meat and cook until the liquid is completely reduced, about 30 minutes.
- Now roast, carefully turning the meat every seven or eight minutes until lightly browned. This will take about 20 minutes longer.
- Break the meat into large pieces and serve on a warm platter, sprinkled with salt.
