- Soak soy chunks in boiling water for 10 minutes. Drain, and squeeze water out of soy chunks. Put oil in a pan temper onion, curry leaves, ginger, chilli and garlic. Add spices to pan, then add it tomato, tomato sauce, followed by coconut milk. Let the it simmer and thicken over a medium flame for 10 minutes. Add soy pieces. Season with salt and pepper as necessary. Serve with fresh basmati rice.
