- Chop 3 potatoes then put salt & pepper on them to taste.
- Put potatoes in a pan with oil in it & fry till just a bit brown
- Add red bell peppers & scallions & cook a few minutes longer
- remove from heat & put in a bowl then add 4 beaten eggs into it.
- after mixing, melt 1 tbsp butter in a pan & put half of the potato egg mixture in the pan. On top of that put 3 slices mozzarella, 2 slices of ham, & the other 3 slices of mozzarella
- On top of the cheese put enough of the potato egg mixture to cover it all
- Cook until bottom is brown, flip, then cook till that side is brown then serve in quarters or cut into 6ths
