- Heat 1 tsp. ghee in a frying pan over a high heat, then add the onion, garlic, ginger and chilli and fry for 1-2 minutes.
- Add the green beans, spinach, tomato and mushrooms and fry for 4-5 minutes, stirring frequently.
- Season with salt and pepper, then set aside whilst you make the omelette.
- For the omelette, beat the eggs and cream together in a bowl.
- Heat the remaining ghee in a frying pan then add the eggs and cook for 3-4 minutes until the egg is cooked.
- Place the filling in the middle of the omelette whilst it is still in the pan, then fold the omelette in half, place on a plate and serve.
