  1. Heat 1 tsp. ghee in a frying pan over a high heat, then add the onion, garlic, ginger and chilli and fry for 1-2 minutes.
  2. Add the green beans, spinach, tomato and mushrooms and fry for 4-5 minutes, stirring frequently.
  3. Season with salt and pepper, then set aside whilst you make the omelette.
  4. For the omelette, beat the eggs and cream together in a bowl.
  5. Heat the remaining ghee in a frying pan then add the eggs and cook for 3-4 minutes until the egg is cooked.
  6. Place the filling in the middle of the omelette whilst it is still in the pan, then fold the omelette in half, place on a plate and serve.
