  1. Bring a large pot of salted water to a boil. Cook the egg noodles according to package directions, then drain well.
  2. In a large skillet over medium heat, melt the butter. Add most of the chopped scallions and all of the minced garlic, and cook, stirring, until fragrant, about 1 minute.
  3. Stir in the brown sugar until dissolved, then add the soy sauce and mix to form a glossy sauce.
  4. Add the drained noodles to the pan and toss until evenly coated and sticky. Plate and garnish with the remaining scallions. Serve immediately.
