- wash greens thoroughly and drain. discard coarser stalks and break tender ones into 4" lengths heat oil over high flame until just below smoking. Add garlic and fry until fragrant being sure not to burn it. Throw in all the greens and toss well to coat. Make sure to scoop garlic up from base of wok and toss over greens. Fry until leaves have wilted and stalks are tender. Add pinch of salt to taste.
