  3. once fragrent, add ginger - garlic.
  4. then add onion - peppers - celery - spring onion whites. increase heat to high
  5. add sugar - white pepper (big pinch) - light soy sauce.
  6. add tofu. finally add spring onoin greens at end then stir in sesame oil and serve
