  1. For the sauce - heat half the oil add garlic and mint cook 2 - 3 min. Add tomato and water stir and boil - reduce to simmer and cook 8 to 10 min. Remove from heat and set aside. For the stuffing - heat rest of oil - add onion and cook 4 - 6 min - add mushroom stems (chopped fine) pinch salt and cook another 2 -3 min. In mixing bowl combine cheese , crumbs, pepper - mix well. let cool then add mushroom/onion mix. In same skillet add a layer of sauce. Fill each mushroom and put in skillet. Spoon another 1 to 2 tsp sauce over each mushroom and 1 tsp provolone. Cover skillet cook on med 1 -2 min. reduce to simmer and cook 10 - 12 min or til mushrooms tender.
