- Carefully separate the cabbage leaves. Blanch the leaves briefly in boiling water, about 30 seconds. Remove and shock in an ice water bath, then drain. Reserve 20 of the large leaves and julienne 1 lb 8 oz/680 g of the smaller inner leaves.
- Heat the oil in a medium saucepan over medium heat. Add the onion and sauté until translucent. Add the rice and toss to coat with the oil. Add the stock, orange zest, thyme, salt, pepper, and chopped cabbage leaves. Cover the pot tightly and cook in a 325°F/163°C oven until the rice is tender and has absorbed all the liquid, about 30 minutes.
- To serve, place 21⁄2 oz/71 g rice mixture on each of 2 large blanched cabbage leaves and roll to completely encase the rice. Serve on a bed of 3 oz/85 g ragoût and garnish with 1 tbsp/15 mL tomato concassé and a sprinkling of chives.
