Ingredients

Directions

  1. Cook rice in rice cooker or accord to package directions.
  2. Mix ground beef, ginger, onions, carrots, crackers, eggs, salt and pepper. Form into 1 inch nails and place on greased broiler pan. Cook for 30 to 45 minutes in oven at 350 degrees
  3. Mix beet juice and vinegar in 2 cup measure. Add water until liquid measures 2 cups. In a bowl whisk together beef and vinegar juice, soy sauce cornstarch, and Brown sugar. Cook in skillet on medium until sauce thickens. Add beets and meatballs. Stir till coated. Serve on top of rice.
