  1. 1. Start by cooking your rice using your preferred method.
  2. 2. While your rice is cooking, place your chopped chicken in a large mixing bowl and add in about 1/2 of your Thai chili seasoning packet, and 1 Tbsp of olive oil. Mix to coat your chicken.
  3. 3. Heat a large skillet over medium-high heat and add in 1 Tbsp of olive oil. Once your oil is hot, add in your seasoned chicken and cook for 4-5 minutes on each side or until your chicken is cooked through and is browned on the outside.
  4. 4. While your chicken is cooking, thaw your broccoli in the microwave and start on your sauce.
  5. 5. For your sauce, add 1 cup of G Hughes Thai Chili sauce to a mixing bowl, and your remaining half packet of Thai chili seasoning. Mix well.
  6. 6. When your chicken is done cooking, add in your chopped onion and cook for 2-3 minutes.
  7. 7. Once your onions are translucent, stir in your sauce mixture and cook for 1-2 minutes.
  8. 8. When your sauce starts to bubble, add in your thawed broccoli and mix everything together to coat.
  9. 9. Taste your chicken and add salt and pepper to preference
  10. 10. Portion your rice out into your meal containers, top with your chicken and broccoli, and enjoy!
