- 1. Start by cooking your rice using your preferred method.
- 2. While your rice is cooking, place your chopped chicken in a large mixing bowl and add in about 1/2 of your Thai chili seasoning packet, and 1 Tbsp of olive oil. Mix to coat your chicken.
- 3. Heat a large skillet over medium-high heat and add in 1 Tbsp of olive oil. Once your oil is hot, add in your seasoned chicken and cook for 4-5 minutes on each side or until your chicken is cooked through and is browned on the outside.
- 4. While your chicken is cooking, thaw your broccoli in the microwave and start on your sauce.
