Directions
- Preheat the oven to 325°F.
- Heat olive oil in a skillet over medium heat and cook the chorizo until fully cooked, about 5-7 minutes. Drain any excess fat.
- Spray a 3-quart (9” x 13”) baking dish with cooking spray.
- Place the potatoes in the baking dish. Top with chorizo, green chilies, and half of the cheese.
