- Pat the salmon dry with paper towels and season with salt, pepper, and chopped fresh thyme.
- Heat a 12-inch skillet over medium-high heat and add half of the olive oil. Once the oil shimmers, add the salmon fillets, skin side up if not removed.
- Cook the salmon for 3 minutes, then flip and cook for another 3 minutes until golden. Remove from the pan and cover loosely with foil.
- In the same skillet, add the minced shallots and cook for 30 seconds. Add the finely chopped cauliflower and mix well.
- Add the remaining olive oil, season with salt and pepper, and toss. Let cook for 3-4 minutes until it begins to brown.
- Turn the cauliflower to brown on the other side for another 3-4 minutes without stirring.
- Add the heavy cream and stir until incorporated. Place the salmon on top of the cauliflower mixture, cover, and cook for another 2-3 minutes until the salmon is fully cooked through to 145°F.
- Serve salmon over cauliflower.
