Tofu Cabbage Soup

Ingredients

• Tofu

  Firm, prepared with calcium sulfate and magnesium chloride (nigari)

  14 oz or 397g

• Cabbage

  Raw

  1 cup, chopped or 89g

• Tomatoes

  Red, ripe, raw, year round average

  1 Italian tomato or 62g

• Eggplant

  Raw

  1 cup, cubes or 82g

• Onions

  Raw

  ½ medium or 55g

• Garlic

  Raw

  2 cloves, minced or 6g

• Vegetable Broth

  From bouillons. Low sodium

  2 cup or 480g

• Olive oil

  Salad or cooking

  1 tbsp or 14g

• Salt

  Table

  1 dash or 0.4g

• Pepper

  Spices, black

  1 dash or 0.1g

Directions

1. Simmer onion, garlic, and olive oil in a small pan over medium heat until translucent.
2. Add tofu, cabbage, tomatoes, eggplant, and vegetable broth to the pan. Bring to a boil, then reduce heat and simmer for about 20 minutes.
3. Season with salt and pepper to taste. Serve and enjoy!
