- Drain the tofu, squeeze out excess water, and cut into 1/2-inch cubes.
- Heat olive oil in a large sauté pan over medium-high heat. Add celery, onion, bell peppers, jalapeno, and garlic. Sauté for about 5 minutes, stirring occasionally, until the vegetables are soft.
- Add the tofu, and stir to combine, sautéing for an additional 5 minutes.
- Add the vegetable broth, tomatoes, rice, Cajun seasoning, bay leaf, thyme, and cayenne. Stir to combine, reduce heat to medium-low, cover, and simmer for about 25-30 minutes, or until the rice is cooked, stirring occasionally.
- Once the rice is tender, add in the okra and stir to combine. Let the mixture continue to simmer, stirring occasionally, for about 5 minutes.
- Remove bay leaf and season the jambalaya with salt, pepper, and hot sauce to taste, if needed. Remove from heat and serve.
