Ingredients

    Frozen, chopped or leaf, unprepared

    Firm, prepared with calcium sulfate and magnesium chloride (nigari)

  • Saltines

    Crackers, (includes oyster, soda, soup)

    1 ½ cup, crushed or 105g

  • Onions

    Raw

    2 tbsp chopped or 20g

  • Scallions

    Spring onions or scallions (includes tops and bulb), raw

    2 medium or 30g

  • Garlic

    Raw

    4 cloves, minced or 12g

  • Tarragon

    Spices, dried

    1 tbsp, leaves or 2g

  • Sage

    Spices, ground

    1 tsp or 0.7g

  • Thyme

    Spices, dried

Directions

  1. Thaw the spinach and squeeze out excess moisture using a colander. To speed up, microwave for 1-2 minutes.
  2. In a food processor, combine all ingredients except the cheese and blend until the mixture holds together. Form the mixture into patties.
  3. Heat vegetable oil in a skillet over medium heat and cook patties for 5 minutes on each side until lightly browned.
  4. Top with cheese during the last minute of cooking. Serve and enjoy!
