Directions
- Cut tofu into cubes.
- Thickly slice onion and mushrooms.
- Halve zucchini lengthways then thickly slice.
- Finely chop lemongrass and crush garlic.
- Heat oil in a non-stick wok over high heat, swirling to coat base.
- Add tofu and stir-fry for 2-3 minutes or until golden. Transfer to a plate.
- Reheat wok over high heat. Add onion and zucchini and stir-fry for 1-2 minutes or until just tender.
- Add mushrooms, lemongrass, garlic and brown sugar. Toss to combine.
- Add snowpeas and 2-3 tsp water. Stir-fry for 1 minute or until snowpeas are bright green.
- Return tofu to wok. Toss to combine. Add lime juice and season with freshly ground black pepper. Toss to combine and serve.
