  1. Warm oil in a large skillet over medium heat until hot.
  2. Add the ground turkey and cook, breaking it into crumbles, until mostly browned, 5–7 minutes. Season with the salt and black pepper as it cooks.
  3. Stir in the chopped mushrooms and cook, stirring occasionally, until tender and most of their liquid evaporates, about 4–5 minutes.
