  1. Preheat oven to 425F. Cut sweet potatoes in half lengthwise and place skin-side down on a baking sheet. Cook for 35-40 minutes. Remove from oven and allow to cool for a few minutes
  2. In medium skillet put oil. Add garlic and onion, stirring until onion is translucent. Add ground meat and salt and pepper to taste and cook
  3. Scoop the flesh from the sweet potato and put in a bowl. Add ground meat and mix throughly. Put mixture back into sweet potato skins and bake for 5-7 minutes
