Vegan Tortilla Soup - Vitamix

Ingredients

  From bouillons. Low sodium

• Tomatoes

  Red, ripe, raw, year round average

• Carrots

• Celery

  1 stalk, medium or 40g

• Onions

  Raw

  ¼ medium or 28g

• Garlic

  Raw

  1 clove or 3g

• Red bell pepper

  Sweet, raw

  1 medium or 119g

• Cabbage

  Raw

  ¼ head, medium or 227g

• Mushrooms

  White, raw

  2 medium or 36g

• Dry taco seasoning mix

  Campbell soup company, pace

  1 tbsp or 3g

• Cumin

  Spices, cumin seed

  1 tsp, ground or 3g

• Chick'n Strips

  Gardein

  4 strip or 34g

• Jalapeno peppers

  Raw

  ½ pepper or 7g

• Corn

  Sweet, yellow, canned, whole kernel, drained solids

Directions

1. Place all soup base ingredients into the vita mix container in the order listed and secure lid.
2. Select variable 1
3. Switch machine to start and slowly increase speed to variable 10
4. Blend for five minutes
5. If adding optional ingredients reduce speed to variable 1. Remove the lid plug.
6. Drop in chicken, jalapeños, and corn through the lid plug opening
7. Pulse for an additional 10 seconds
