Ingredients

Directions

  1. Prepare the rice according to package instructions.
  2. Slice the onion into wedges, chop the bell peppers, thinly slice the carrot, mince the garlic and ginger, and slice the mushrooms.
  3. In a small bowl, combine the cornstarch and first portion of water. Add soy sauce, brown sugar, sesame oil, and red pepper flakes. Stir in hot water, mix well, and set aside.
  4. Heat olive oil in a large deep pan over medium-high heat. Add the onion, bell peppers, and carrots, and sauté until the onions are translucent and fragrant.
  5. Add the ginger and garlic and sauté for 2 minutes, stirring to prevent burning.
  6. Add the mushrooms and cook for 2-3 minutes. Add the water chestnuts and frozen edamame, and sauté for 2 minutes.
  7. Pour the sauce into the pan and stir until thickened.
  8. Taste and adjust seasoning as needed, then serve over rice, garnishing with sesame seeds.
