  1. Combine the spice blend ingredients and toast lightly in a dry sauté pan over low heat
  2. Heat the oil in a in a large stew pot over medium heat. Add the onion, garlic, and leeks and sweat until the onions are translucent. Add the spice blend to the onion mixture and sauté until aromatic. Add the pumpkin, squash, zucchini, and enough of the stock to cover the vegetables. Stew for about 10 minutes.
  3. Add the carrot, celery, eggplant, tomato purée, currants, and the remaining stock. Simmer until all of the vegetables are three-quarters cooked, about 25 minutes. Stir in the chickpeas and fava beans. Cover and stew until the vegetables are very tender.
  4. Season with the lemon juice, salt, and pepper and garnish each portion with lemon zest.
