- Peel and cut potatoes into small cubes. Put potatoes and one garlic clove in a small pot and cover by 1 inch with water. Boil until soft, mash until you get a sauce, season with 2 tsp of the salt, pepper and mixed herbs of your liking.
- While potatoes are still boiling chop vegetables into desired size. Boil pasta according to instructions with the other garlic clove and 2 tsp of remaining salt. 5 minutes before the pasta is done add beans and carrots. When pasta is done, turn off heat, add spinach and pepper, drain water.
- Add potato sauce to spaghetti, adjust salt to taste. Enjoy!
